Candy Emulsifier, Chocolate plasticizer, Ice cream Emulsifier With dosage of 0.5%, Type SF-3 works as Emulsifier and Plasticizer in candies to avoid fat separation and keep shape staying. And the texture is better. With dosage of 2~5‰, Type SP-3 may help to improve chocolate’s crisp by preventing fat separation and crystallization. Type SF-3 is also used in gum confection to prevent polyvinyl acetate (PVA) and ester gum separation and improve chewing texture. Accounting for 10% of matrix, it acts as the aerating agent in aerated candies. Type SF-3 is also the ideal emulsifier for ice cream products to increase ice cream’s texture without crystals and shape staying and storage get improved. It works better with sodium alginate and pectin. Dosage in ice cream is 0.3%-0.5%.
