Type SF-1 is the main improver and emulsifier used in flour products. Together with other improvers, the mixes may improve dough fermentation,dough structure and product shelf life. Mixing with lecithin and sodium alginate, which increase noodles’ elastic and pliability, moreover, the noodles soup seems clearer. In rice noodles, Type SF-1 improves product water-wetting and pliable taste.
